The grilled jerked shrimp that I made last night was fantastic. The right amount of sweet and hot to offset one another. The mango salsa infused with fresh cilantro was a show stopper and the Riesling exploded with flavor when combined with the spiciness of the grilled shrimp. If you are looking to eat lighter and healthier this is definitely a meal for you. Not heavy, but fills you. The great thing about grilling food is that any fat is cooked off. This meal was absolutely delightful.

1 mango, peeled and finely chopped

1/2 avocado, finely chopped

1/4 cup finely chopped red bell pepper

2 tablespoons chopped fresh cilantro

1 tablespoon fresh lime juice

1 teaspoon sugar

1/4 teaspoon salt

2 pounds unpeeled large raw shrimp

1 red onion, cut into 1/4-inch-thick slices

2 tablespoons olive oil

Lettuce chopped

Combine first seven ingredients in a bowl and set aside

Peel shrimp and leave tail on and remove veins. Toss shrimp in bowl

with oil. Sprinkle with Jamaican Jerk seasoning, toss and coat. Skewer and grill shrimp

and onions over medium heat, approx 300 degrees for about 6 minutes. Turn only once.

Cut onion up and add to salsa mixture. Place bed of lettuce on plate with salsa mixture on top and add shrimp skewers.
