Chicken Wings with Spicy Mango Sauce

Mango Wings

Prep Time 20 minutes  Marinate 2 -24 hours

Bake 25 minutes at 450

24 Chicken Wings – drums preferably

1 cup organic mango juice

1/2 cup organic orange or tangerine juice

1/2 organic lemon juice

1/2 cup chopped parsley

1/4 red wine vinegar (organic)

1/4 olive oil

1 to 2 fresh jalapeno peppers, seeded and chopped

6 cloves of garlic, finely chopped

1 teaspoon sea salt

1 mango, seeded, peeled and chopped

1/3 cup yellow onion, chopped

1/4 cilantro, finely chopped

Orange slices are optional

Place chicken wings in a glass container and set aside.

For marinade, in a bowl combine next 10 ingredients through the cumin. Remove 1/2 cup and set aside in a container for later use.

Pour remaining marinade over chicken and marinate for 2 – 24 hours, turning 1 time

Preheat oven to 450. Drain chicken and arrange on an unheated broiler rack. Back 25 minutes or until golden brown.

Meanwhile, for the sauce, in a blender combine reserved 1/2 cup of marinade, mango, onion and cilantro. Cover and blend until smooth. Serve with chicken and orange slices.
