Sesame Noodles with Chicken
1lb Udon Noodles
6 Tbs. Sesame oil
4 Cloves of garlic
2/3 cup organic creamy peanut butter
1/2 cup soy sauce with freshly chopped ginger
6 Tbs. Rice vinegar
1/4 cup brown sugar
1 1/2 lbs chicken tenders chopped
2 Tsp. peanut oil
Kosher salt
Freshly ground pepper
6 scallions, thinly sliced
Boil a large pot of water with salt. Add Udon noodles and cook accordingly. Drain and rinse under cold water. Transfer to large bowl and toss with 1 Tsp. of sesame oil.
Coarsely chop garlic and add 5 tbs. of sesame oil, peanut butter, soy sauce, vinegar brown sugar and salt. Mix until smooth.
Trim chicken, if necessary. Season tenders with salt and pepper. Heat peanut oil in a 12 inch skillet over medium-high heat. Coook tender until brown on both sides and cook through. Transfer chicken to pasta mixture and add half of the scallions.
Pour about 1 1/4 cups of dressing over the chicken and pasta. Add dressing to taste. Sprinkle with remaining scallions.
Serve with steamed broccoli.
